五粮液有着我国现存早并且一直使用今的地穴式曲酒发酵窖池群，距今已有638年历史。“千年古窖万年糟，酒好须得窖池老”，明代古窖经过600多年的发酵，窖池产生种类繁多的微生物和香味物质，并且日积月累地向窖池深处渗透，窖龄越长，微生物和香味物质越多，酒香越浓。600多年的繁衍，已使参与古窖发酵的微生物多达150多种。
